Caramelized Onion & Goat Cheese Pizza

For the Dough:

1. Mix flour, yeast, and water in a bowl until combined. Rest for 30 minutes.
2. Add salt and olive oil to the dough, then knead for 5 minutes.
3. Rest the dough for another 30 minutes.
4. Perform one stretch and fold, then do 3 coil folds 30 minutes apart.
5. Cover the dough and refrigerate overnight.
6. The next day, divide the dough into 2-3 balls. Rest for 1-2 hours until puffy.

For the Caramelized Onions:

1. Thinly slice the yellow onions.
2. In a pan, caramelize the onions in 2 tablespoons of butter and 3 tablespoons of Colavita olive oil with 1 teaspoon of salt.
3. Cook over medium-low heat for 25-30 minutes, stirring occasionally, until they are deep golden and jammy.
4. Add 0.5 teaspoon of black pepper just before the onions are ready, if desired.

For Assembly and Baking:

1. Heat a pizza oven to 800°F or a home oven with a pizza stone to 500°F.
2. Shape a dough ball into an 8-10 inch round.
3. You can use the Colavita pizza sauce as is or give it a quick blend for a smoother base.
4. Spread about ½-¾ cup of pizza sauce over the shaped dough.
5. Top with ⅔ cup of shredded mozzarella, then about ⅓ of the caramelized onions.
6. Add a little more mozzarella to cover, and then place chunks of goat cheese.
7. Bake the pizza for 2-3 minutes in a pizza oven or 6-8 minutes in a home oven until the crust is golden and the cheese is bubbling.
8. Finish with a drizzle of chili oil and fresh basil, if desired.
