Whipped Feta & Cherry Tomato Confit

What you need

tbsp greek yogurt

lb feta
clove garlic

tbsp extra-virgin olive oil
tbsp seasoning
cup yellow cherry tomatoes
Instructions
For Serving: Fresh dill or chives A few basil leaves Drizzle of extra virgin olive oil (optional) Instructions Tomato Confit: Preheat the oven to 335°F. In an oven-safe dish, combine the cherry tomatoes, Dan-O’s Cheesoning Seasoning, sliced garlic, and olive oil. Mix well. Bake for 30-40 minutes or until the tomatoes are soft and slightly caramelized. Toast the Bread: Once the cherry tomato confit is ready, increase the oven temperature to 350°F. Slice the baguette horizontally. In a small bowl, mix the olive oil (or butter) with Dan-O’s Cheesoning Seasoning, then brush the inner sides of the baguette with the mixture. Bake for 10-15 minutes or until golden and toasted. Make the Whipped Feta & Serve: In a food processor, combine the feta cheese, garlic (if using), lemon zest, lemon juice, Greek yogurt, and olive oil. Blend until smooth and creamy. Spread the whipped feta on a large plate. Top with the cherry tomato confit, fresh basil, dill, and a drizzle of olive oil if desired. Slice the baguette and serve warm. Enjoy!View original recipe
